Strawberry compote with balsamique vinegar

Serving size: 1/2 cup (125 ml)

Ingredients

  • 4 cups (1000 ml) strawberries cut into quarters
  • ½ cup (125 ml) sugar
  • ¼ cup (60 ml) balsamic vinegar
  • 3 Tbsp (45 ml) water
  • 10 peppercorns
  • 12 basil leaves, chopped

Preparation

  • In a saucepan, place the strawberries with sugar. Cook over medium-high heat for 3-4 minutes.
  • Add the vinegar, water and whole peppercorns. Simmer for 15 minutes.
  • Remove peppercorns.
  • Serve on a white cake and garnish with basil.
