¾ cup (175 ml) aquafaba (liquid from a can of chickpeas)
75 g powdered sugar (1/2 cup + Tbsp)
225 g fresh strawberries (around 1 1/3 cup sliced strawberries)
Preparation
Place the aquafaba in a large bowl. With an electric hand mixer (with the whisk attachment) whisk the aquafaba until stiff peaks are obtained (whisk for about 10-15 minutes). Add the powdered sugar and lightly whisk to incorporate well. Set aside.
In an other bowl, place the strawberries. Puree with an electric or a hand blender.
Pour the fruit puree into the aquafaba mixture. Mix well.
Pour the mixture into a large mold, lined with parchment paper.
Place in the freezer at least 4-5 hours.
