Ingredients

  • 2/3 cup (165 g) tomato in cubes
  • 1 cucumber (250 g) in cubes
  • ¼ cup (25 g) chopped red onion
  • ¼ cup (30 g) black olives
  • 1 Tbsp (15 ml) oil
  • 1 Tbsp (15 ml) lemon juice
  • 2 Tbsp (30 ml) fresh parsley, chopped
  • Salt and pepper

Preparation

  • In a large bowl, mix together all ingredients.
  • Season to taste and serve.
