Warm beet salad

Ingredients

  • 1 medium beet cooked and sliced (about 5 slices)
  • 1 Tbsp (15 ml) Daiya plain cream cheese
  • 7 Glutino stick pretzels (6 g)
  • 1/3 cup (75 ml) arugula
  • 1 tsp (5 ml) olive oil
  • 1 tsp (5 ml) balsamic vinegar

Preparation

  • Preheat oven to Broil.
  • On a baking sheet, put beet slices.
  • Spread the cream cheese on each beetroot slice.
  • Broil until cheese is golden on top.
  • Place the beet slices on a plate. Add pretzels and arugula.
  • Dress with oil and vinegar. Enjoy!
