Serving size: 2 cups (500 ml)
Ingredients
- 1 tsp (5 ml) olive oil
- 1 slice of low protein bread from Cambrooke foods (2110)
- 1 cup (250 ml) spinach
- ½ cup (125 ml) sliced strawberries
- ½ avocado, in cubes
- 1 Tbsp (15 ml) olive oil
- 1 Tbsp (15 ml) balsamic vinegar
- 1 tsp (5 ml) maple syrup
- 1 tsp (5 ml) Dijon mustard
Preparation
- Cut the bread into cubes. In a skillet, heat olive oil over medium-low heat. Add the pieces of bread. Grill for a couple of minutes on each side.
- In a plate, put spinach, strawberries, avocado and croutons.
- In a small bowl, mix together olive oil, balsamic vinegar, maple syrup and Dijon mustard. Pour over salad just before serving.
