In a food processor, place the baking mix, methylcellulose, sugar and salt. Pulse for a couple of second. Add the margarine and pulse again to get small pieces of margarine. Add apple juice and pulse to get a ball.
Using a rolling pin, roll the dough on a floured work surface. Cut squares of approximately 3 inches (8 cm). You should get 12 squares.
Place each square of dough into a greased mini-muffin pan to fully cover the bottom and get small cups.
Bake in a preheated oven at 375 F for 10-12 minutes. Let it cool completely.
Meanwhile, in a bowl, mix together the mango, bell pepper, green onion, lime juice, salt and pepper.
When cooled, top each cup with mango mix. Serve immediately.
