Parsnip and pear soup

Serving size: 1/2 cup (125 ml)

Ingredients

  • 1 Tbsp (15 ml) olive oil
  • 1 onion, cubed (60 g)
  • 5 parsnips, peeled and cubed (350 g)
  • 3 pears, peeled and cubed
  • 3 cups (750 ml) vegetable broth
  • Salt and pepper
     

Preparation

  • In a large pot, heat oil. Saute onions for a few minutes. Add the parsnips and pears. Sauté for about 1 minute. Add broth and bring to a boil. Season to taste.
  • Simmer until parsnips are tender, about 30-40 minutes.
  • Puree and season to taste.

Tip : Use canned pears in water. The preparation will be even faster!
