In a bowl, cook the cauliflower in the microwave for about 8-10 minutes, until it is still firm but it can be mashed with a fork. Do not overcook! Drain well.
Cool slightly and mash with a fork. We still want to see small pieces of cauliflower!
Add the Eggz, chives and pepper. Mix well.
Form 10 patties and place on a baking sheet covered with parchment paper.
Bake for 10-12 minutes on each side.
Note: You could add your favorite spice blend in the mixture. Also, you could add your favorite low protein cheese. Remember to calculate the protein content of the additional ingredients you add to the recipe.
You may also want to try other vegetable such as broccoli or spaghetti squash!
