Pizza rolls

Ingredients

  • 2 tsp (10 ml) sugar
  • 1 ¾ cup (425 ml) warm water
  • 6 g (1 ½ tsp) traditionnal yeast
  • 2 Tbsp (30 ml) olive oil
  • 350 g (3 ½ cups) Wheat starch (0454 or 2203)
  • 60 g (1/3 cup) Métamucil (or 30 g whole psyllium husk - 1/3 cup)
  • ½ tsp (2,5 ml) salt
  • 1 Tbsp (15 ml) Baking powder
  • ½ cup (125 ml) tomato sauce
  • 1 1/3 cup (120 g) Cambrooke Mozarella shred (2315)

Preparation

In a bowl, mix warm water, sugar and yeast. Let stand for 5-10 minutes to activate the yeast.

Meanwhile, mix together the wheat starch, Metamucil, salt and baking powder.

When the yeast is activated, add oil to the mix. Make a well in center of dry ingredients. Pour the liquid ingredients. Mix well. Knead the dough for a few minutes.

Place in an oiled bowl and let rise for 25-30 minutes with humidity (Heat a cup of water in the microwave oven, it creates the perfect humid place to let the dough rise).
 

Preheat oven to 350 F.

To make the pizza rolls, take half the pizza dough. Roll the dough to get a rectangle of 17 x 10 inches (35 X 25 cm). Put half of the tomato sauce (4 Tbsp) on top and spread it on all the dough, up to ½ inch (1 cm) of the edges. Sprinkle with half the mozzarella cheese (2/3 cup or 60 g).

Roll the dough on itself to get a 17 in (35 cm) roll.

Using dental floss, cut into 12 slices. To do this, slide the floss under the roll. In each hand, grab one end of the floss and cross above the roll and pull. As simple as that! This way, you get perfect round rolls. To get identical pieces, first cut the roll in the middle into 2 equal parts. Cut each roll in 2 pieces again. You now have 4 pieces of the same length. Then cut each piece in 3 rolls.

Repeat the steps with the remaining ingredients.

Put each roll in a non-stick muffin pan. Bake at 350F for 20-25 minutes.
